
In my family I'm the only one raw or vegan. Everyone else just eats healthy. Tonight for dinner is lasagna. I told my son this and he says, "No mommy, I don't want lasagna. I want vegan lasagna." How exciting! So I decided to make myself raw lasagna for dinner and let everyone try it and see what they think.
There were a lot of recipe's online that looked fantastic, but I didn't have a bunch of ingredients. So I decided to start finding individual recipes.
Magic Tomato Sauce (www.reallyrawfood.com)
2 cups tomatoes
1 1/2 Tbsp apple cider vinegar
1 Tbsp agave nectar, or two small dates
1/2 cup fresh basil
1/2 cup sun dried tomatoes, soaked in advance
1 tsp Italian herbs
1/3 clove garlic (optional)
Blend all ingredients together until you've reached a thick, tomato sauce consistency. If too thin add more dried tomatoes. If too thick add fresh tomatoes.
Italian Pizza Cheese (Ani Phyo's raw food kitchen book)
2 cups macadamia nuts
Juice of one lemon
3 cloves of garlic
1/2 cup basil leaves
1 tsp sea salt
2/3 cup water, as needed
Blend until smooth.
For noodles I'll use sliced zucchini and I think I'll add chopped olives in with the sauce.
To top off the meal, I went to hellovino.com to pair up a wine with my lasagna. The result was Chianti! Thanks Hello Vino!
It seems simple, but for making it the first time, I'm really excited and not too worried about it. When I eat it later I'll have some pics up and let you know how it tasted. Wish me luck!
