All on my own!

It got a little tough for me to be raw vegan with life happening and all. But I'm excited to say that slowly, but surely, I'm well on my way back and I have been feeling great. Especially since I made up a new dessert all on my own.

I was trying to just use what I had in the cupboard and just experiment to see what I could come up with. Here it is:

Fudge

1/2 cup raw cashews
1/2 cup pitted dates
1 tsp vanilla
1/8 cup cocoa powder
1/8 cup water as needed

First chop the nuts up in the food processor as powdery as it can get before it starts to turn into butter. Then add in the dates. Mix together well, then add the rest of the ingredients. Blend until you get a fudge like consistency.

Since I'm the only one who eats it in my house I just scoop it out into a bowl and put it in the fridge for a couple hours to be a little more solid. Sometimes I can't wait and just grab a spoon. However, I did make it once for a pot luck and tried to make it "pretty" by spreading it into a baking dish and putting it in the freezer for a couple hours. I suggest the freezer because it seemed to solidify much better and quicker and was able to actually cut it into squares.

I'm proud of this one and the only few people who have tried it say its great! Yay me! Maybe I'll make a large batch and put it in the pan for pictures. We shall see what my schedule is like...
